Pumpkin Cupcakes for Halloween
2-3 cups finely shredded carrots
1.5 lbs dates
1.5 cup walnuts
pinch of cinnamon, ginger and turmeric
Put all the ingredients into a food processor and finely chop them. Place the mixture into cupcakes
juice of 3-4 oranges; if you would like a different colour of your icing you can add some berries.
2 cups cashews
1 cup dates
half vanilla stick
Thoroughly blend all the ingredients until smooth. Using a piping bag decorate the cupcakes with the icing.
