Healthy Fruit Scones

We all love scones!

I prefer to improve any recipe in a healthier version of it. It also happened to the scone recipe. And it’s easy to make!

  1. In a bowl place 2 glasses of a sieved wholegrain flour.
  2. Add 1/2 glass (or less) brown demerara sugar.
  3. Add 1/2 glass of raisins (or any dried fruit).
  4. 1/2 tbs of baking powder.
  5. A pinch of salt and some vanilla.

Mix all together with a spatula.

6. Add about 80 g of grated unsalted cold butter. Use a knife to mix it into the flour (just “cut” like the flour until the butter is incorporated into it).

7. Add into the mixture about 1 and 1/2 glass of buttermilk. Keep using the knife, no need to knead the dough. It should be quite gooey.

Place the mixture on the table with some flour on it and gently knead the dough into a square (about 3 cm high).

Cut the square into small squares (size of your choice) and transfer the scones onto a baking tray, covered with a grease paper.

Bake them in the oven, t 180 C for about 10-15 min (depends on the size of your scones). Just use a prick to check the readiness.
